FORTY : SICILIAN TUNA

The high quality ingredients really make this sandwich something special. My usual reaction to tuna sounds something like "meh", but this tuna sandwich was actually quite delicious. The only deviation I made from the recipe was to use a lovely local Albacore tuna instead of Sicilian tuna (I just couldn't resist!). I am confident that it was still just as good :)

Fresh ciabatta is first slathered with lots of mayo (of course) then layered with fresh, ripe, seasoned tomatoes, arugula and thinly sliced red onion (all from the garden!) and finally topped with flaked tuna. The result is a huge, decadent, delighful mess.

I have to say I am a huge fan of the Frankies' habit of seasoning the tomatoes before they go on the sandwiches. It really makes them pop! My only complaint so far is that every sandwich has been piled soooo high that they are super difficult to eat. What a sloppy, tomato-y, mayo-y mess this one was. But so worth it!
